Jebel Akhdar's Famous Villages
Jebel Akhdar boasts three renowned villages: Al Aqer, Al Ayn, and Al Shuraigah, famed for their rose production during March and April, alongside Saiq. Throughout the year, these villages flourish with a diverse array of crops. From olives, grapes, and figs to apricots, pears, apples, peaches, pomegranates, walnuts, and almonds, the land yields a bounty of agricultural treasures.

500 years of heritage distilled into 'Dejan', Oman's prized rose water. In Al Ayn, this timeless craft begins amidst the pink-hued fields of ward al jabal roses in mid-March, continuing through mid-May. A labor of love, the distillation process keeps villagers occupied for three intense months each year

Traditional Rosewater Processing System
In this age-old method, a gas-fueled ground fire delicately steams the fragrant rose petals, releasing their essence into the air. As the steam gently rises, cold water is carefully introduced into the round dish tops, triggering a beautiful dance of condensation within the compartments. Each droplet of condensed steam gracefully trickles down the slopes of an inverted cone, finally collecting in a gleaming steel bowl below.
This meticulous process, steeped in tradition, is a testament to the artistry of gradual distillation. The result? A rich, smoky brown rosewater, imbued with the essence of the roses and the wisdom of generations past."
2 Kilograms of Damascena Roses Brew Oman's Prized Rosewater
Of the thousands of varieties of rose, only a few produce the fragrant oil required to make rosewater, damascina being one of the most famous of this prized variety. The distillery process will begin only when the villagers are confident that they have enough roses, typically about 2kg, to produce a full batch of rosewater.
